Osteria Francescana has been awarded the prestigious title of 'best restaurant in the world'. That happened during the presentation of the awards by the trade magazine Restaurant in New York, last Monday. It is the first Italian restaurant ever to win the award.
Osteria Francescana (note: website overloaded because the whole world now wants to book a table here) managed to beat the Spanish El Celler de Can Roca, who took the title last year. Then Chef Massimo Bottura's Modenese restaurant came in second. In 2013 and 2014 he reached the podium with the third place.
Bottura was visibly emotional at the ceremony. In his speech, he said that his work is an art form. "It's all about our work, every day in the kitchen to make only the very best."

Third place went to New York restaurant Eleven Madison Park. The rest of the top spots were then occupied by restaurants from Denmark, France, Spain, Japan and Austria.
Perfect balance
The jury praised Bottura for the 'twist' he gave to traditional ingredients and for his Parmigiano Reggiano in particular, which had 'unprecedented shapes and textures'. 'The chef's ambitious creations strike a perfect balance between heritage and modern cuisine,' said the jury. 'Deliciously executed classics, such as the tagliatelle with ragù and risotto with veal jus'.
Osteria Francescana was already the best restaurant in Italy. Massimo Bottura has had three gold shiny Michelin stars for some time now.
The longlist of the best restaurant in the world included restaurants in 23 countries, half of which were in Europe. Spain in particular did well with seven restaurants in the top fifty and three in the top ten.

The jury of the best restaurant in the world
The awards for the best restaurant in the world – an initiative of the trade magazine Restaurant – were first presented in 2002 and have since become an important reference for gourmets. Last year the awards were discredited, because some restaurants and judges got along a little too well. The jury consists of 972 experts; writers, chefs, restaurateurs and gourmets, who rate the restaurants at which they have eaten over an eighteen-month period.

De Librije from Zwolle – with chef Jonnie Boer – finished as the best restaurant in the Netherlands in 38th place in the top fifty.
